Peanut Butter Balls
Ingredients:
1 Stick of butter (soft)
2 Cups of creamy peanut butter
3 Cups of powdered sugar (no need to sift)
1 Tsp vanilla extract
2 Bags of milk chocolate chips
Directions:
- Cream together soft butter and peanut butter with hand mixer.
- Add the powdered sugar one cup at a time until all is blended. Batter will be sticky.
- Place wax paper over the dough and place in the fridge to firm up.
- Remove dough and roll into small 1 inch balls, place on wax paper lined cookie sheet (you can put powered sugar on your hands to roll if it is still sticky)
- Place cookie sheet with rolled balls into the fridge and freezer to get firm.
- Melt chocolate chips in a double boiler or in a microwave safe-bowl to met.
- Remove the PB Balls and using a tooth pick or spoon dip the balls in the chocolate.
- Place back on the wax lined cookie sheet and allow chocolate to harden. (I placed back in the fridge or freezer for a few minutes)
We made these for our work for the nursing home cause every Tuesday we have cooking class & they loved them & they are really good when they are in the freezer especially :) so if you make them tell me how they turned out, and if you loved them too!!!

Corn Dip
Salted Caramel Pretzel Bark
2 sticks of butter
1 cup of light brown sugar
1 reg. bag of pretzels (you'll use about 3/4 of the bag)
12 ounce bag of chocolate chips
Sea salt - ( I use our coarse sea salt with our grinder)
Preheat the oven to 400.
Line a large bar pan with parchment paper, cover with pretzels
In a medium saucepan melt the butter over medium-low heat. When it begins to bubble add the brown sugar. Stirring occasionally let the butter/sugar mixture meld together and brown. This should take about 3 minutes. Do NOT let it boil, you will have sticky goo that is no good. When you have a nice, brown caramel pour it over the pretzels, slowly and evenly. You can then use a spatula to spread it out, you have to work quickly and gently. It hardens fast so even pouring is the best method.
Bake the sheet for 5 minutes.
Remove the sheet from the oven and sprinkle the whole bag of chocolate chips evenly over the mixture.
Place back in the oven for about 45 seconds. If you let it sit there too long the chocolate will burn.
Remove from the oven and use a silicone spatula to evenly spread the chocolate over the top.
Sprinkle with sea salt and refrigerate for a minimum of 1 hour.

Corn Dip
Now this is a simple recipe my cousin Dan made it during thanksgiving & oh my gosh you'll want to keep coming back for more it's that good, and I personally like to dip this in Frito's (the scoops)
1 cup mayo
1 cup shredded parm
2 cans corn (drained)
diced jalapenos
1 block (1/2 pound) Pepperjack cheese
Shred the block of cheese and mix all ingredients together - put in a small crock pot and stir til creamy - usually takes about 2 hours to melt down. Serve & Enjoy!!

ReplyDeleteOh, I just read your recipe for Salted Caramel Pretzel Bark and I am intrigued by it. I've made the toffee with soda crackers but never thought to make it with pretzels before. And the tip about not letting the sugar mixture boil was super helpful. I always wondered why sometimes it works and other times it doesn't. I'm pinning this!!
ReplyDeleteWe love Chocolate & Pretzels - so what's not to love? And easy too - if you watch out not to burn the caramel! And I happen to know that Sea Salt and Chocolate are a terrific combination.
ReplyDeleteThey only change I might TRY is to substitute Dark Chocolate Chips for the semi-sweet morsels (we LOVE dark chocolate!) and it sounds like there might be enough sugar to keep it sweet. I'll try it both ways... and let you know how it goes. Thanks & Happy New Year!
